Nishiki (錦町) lies in the western part of the Chugoku Mountains. Peaks of around 1,000 meters surround the town, including Mount Jakuchi, the highest in Yamaguchi Prefecture, and the Nishikigawa, the largest river in the prefecture, runs through its center. The town's abundant, high-quality water has been selected as one of Japan's 100 Famous Waters (Meisui Hyakusen). Its basin climate also brings a wide temperature difference between day and night. Together these make the area ideal not only for growing sake rice but also for brewing sake.
Founded in the mid-Edo period (1764), the brewery is the oldest in Yamaguchi Prefecture. In this setting of natural beauty and clear waters, it passes on Japanese culture and tradition and conveys the appeal of sake, which is handed down across eras and generations. It continues to brew drops that capture the essence of sake, blending techniques inherited within the family with the latest technology.
