Jun-shu — rich and umami-driven

The junmai designation at 70% polishing and 16% alcohol, together with the description of increased mellowness, umami and a powerful yet balanced profile, points to a restrained aroma, a full and rich body, and moderate sweetness. The wooden-tub note mentioned for warmed sake supports a rich, mature style rather than a fruity one.

About

The brewing water rises from the Hidaka Mountains and comes from the Satsunai River system, a spring water that has repeatedly been honored as one of Japan's cleanest rivers. The sake rice is grown in Hokkaido by producers bound together by trust, people whose faces we know, and is sake rice suited to sake brewing. Made in Kioke No. 1 wooden vats using traditional handcrafted methods, with each moromi (fermentation mash) carefully brewed one batch at a time, this sake has more mellowness and umami than last year, and its strength is balanced with a harmonious taste. When warmed, a subtle aroma from the wooden vat can also be enjoyed. Try it slightly chilled, or at any temperature from room temperature to lukewarm (nurukan), alongside seasonal dishes.
