About

In 2006 (Heisei 18), marking 200 years since the brewery was founded in 1806 (Bunka 3), Yoshida Shuzo revived the Asaizumi brand, a name recorded in Edo-period documents. The aim was to recreate the sake of the brewery's early days. The result is this junmai kaiko-shu, a sake that evokes the past. Made with Yamada Nishiki, a sake rice polished to 85%, it has a deep yet fresh rice umami and a dry, nostalgic character that is easy to keep drinking. It is the origin of the low-polish series.
