About
Milled to a traditional rice polishing ratio of 90%, with only 10% of each grain polished away. It is brewed using kimoto (traditional yeast-starter method), a technique handed down since the Edo period. The low polishing rate lets the kimoto character come through fully, offering a substantial body and distinctive umami, along with a lactic acidity that adds a sharp, tingling bite. It is enjoyable chilled, and warming it draws out its richness even further. This is a full-flavored, umami-forward sake. *Muroka Shizenshu (unfiltered natural sake)
