About
At the brewery, we check the aroma, the sound, the appearance, and the feel of the paddle when stirring the mash, to confirm how fermentation is progressing. This season's doburoku (unfiltered, unpressed rice wine) offers the same lively fizz as last season, or even more, in the "puchi-puchi, shuwaa" of its bubbles. Please enjoy the especially vigorous sparkle right after it leaves the brewery. Keiryu Doburoku is a treasured sake, faithfully brewed according to records passed down through generations at Endo Sake Brewery. Because fermentation continues inside the bottle, the cap has a special patented design that lets gas escape, preserving the flavor and quality. The bottle will not spill even when laid on its side, but if it is kept lying down for a long time during storage, gas cannot escape and the sake will seep out. Always store it upright in the refrigerator. Before opening, gently shake the bottle to evenly distribute the settled moromi (fermentation mash), and then enjoy.
