About
Made from Yamada Nishiki polished to 50%, this genshu (undiluted) junmai ginjo is slowly fermented at low temperature over an extended period. Aromas of pineapple and Western pear come forward, along with notes of shiratamako (glutinous rice flour), white flowers, and fresh green leaves. Its refined sweetness and acidity are well balanced, and a subtle bitterness on the finish gives a dry, crisp sensation. Overall, it is very mellow and fruity.
