About

The aroma first opens with notes of konpeito (star-shaped sugar confectionery) and sugarcane sweetness, accompanied by the herbal fragrance of sweet basil. When swirled, all the nuances blend together and the balance settles. Afterward, a cool, firm character of rice rises beautifully. Although the aroma gives an impression of sweetness, the palate is light and nimble, with a gentle, slightly milky acidity and a clean, refined texture. Toward the finish, a soft, plump richness of rice emerges. The rice used, Kinmon Nishiki, belongs to the Yamada Nishiki lineage and was grown in only a very small area of Nagano Prefecture, which is why it is said to be a 'phantom' sake rice. Its delicate, sweet aroma is accompanied by a faint effervescence, yet the mouthfeel is soft. The flavor balances moderate acidity with a gentle sweetness for a light taste. The umami of rice spreads across the mouth, and its defining feature is a rounded, deep transparency. Ingredients: Narai mountain spring water, Kinmon Nishiki rice from Azumino, yeast (Kyokai No. 7 yeast) Rice polishing ratio: Not disclosed, Junmai Daiginjo class Origin: Narai-juku, Nagano Prefecture Storage: Refrigerate at 5-10°C, store in a cool, dark place; upright storage recommended * Because every step, from rice washing through brewing, is carried out by hand, production volume is limited.<br>
