Flavor profile Kun-shu
Kun-shu — aromatic and light
The junmai daiginjo grade and Kyokai No. 7 yeast, along with the description's 芳醇 and 透明感, point to a high aroma. The 14% alcohol, slight effervescence and soft, clear mouthfeel suggest a light-to-medium body with moderate sweetness.

About
Because we wanted people to drink it without preconceptions, we have deliberately not stated the sake rice or rice polishing ratio on the bottle. Blended with ultra-soft water from the mountains of Narai, it offers a clear, smooth, and rich flavor, with a gentle light effervescence. This bottle is the product of our continued search for the best expression of Narai that is truly our own. Ingredients: Narai mountain spring water; sake rice undisclosed (one of Kinmon Nishiki, Sankei Nishiki, or Miyama Nishiki); yeast: Kyokai No. 7 Rice polishing ratio: undisclosed; Junmai Daiginjo class Origin: Narai-juku, Nagano Prefecture Storage: Refrigerate (5-10°C); cool, dark place, upright storage recommended *Because everything from rice washing to brewing is done by hand, production volume is limited.
