About

Ryujin Shuzo is a sake brewery in Gunma Prefecture. Its name, Ryujin, comes from the Ryujin no Ido, a renowned well of spring water used in its brewing. Kezuka Daizen Nokami, the first head of Ryujin Shuzo, is said to have discovered the Ryujin no Ido, a water source rivaling the Miyamizu of Nada. The water is snowmelt that had lain dormant as groundwater for about 300 years. The sake brewed with this water was named Oze no Yukidoke. The brewery practices traditional sake brewing by hand rather than by machine, and the work is carried out solely by young local staff. Rice is polished carefully in the brewery's own rice polishing machine, and every step from rice washing to pressing is done by hand. After bottling, the sake is slowly aged at low temperature in a dedicated refrigerated warehouse before it is released from the brewery. Grape-like aromas and a clean, luxurious taste that comes from the pure heart of the rice, possible only through high polishing. Carefully selected large-grained Omachi rice, polished down to 18%, makes this a special creation.
