About
Brewed with Kokuyosui, an ultra-soft water from Wada Pass that is said to be the finest in Japan. It is generally said that in sake brewing, minerals such as calcium, potassium, phosphate, and magnesium serve as nourishment for yeast, promoting healthy growth and allowing the fermentation of the moromi (fermentation mash) to proceed smoothly. Soft water with low mineral content is more difficult to brew with, but it draws out the umami of the rice firmly. When fermentation proceeds slowly, the result is a sake with a fine, delicate texture.
