About

Brewed from Yamada Nishiki, the finest sake rice, milled to a rice polishing ratio of 40%, carefully selected, and fermented thoroughly at low temperature over a long period. Brewing is timed for a brief spell in the depths of winter. Apart from milling, no machinery is used, and the sake is pressed in a traditional sake press with as little pressure as possible. On the palate, a fruity aroma reminiscent of fruit wine slowly spreads. A refreshing acidity balances the smooth, clean flavor. Despite its rich aroma, the finish is crisp and it slips easily down the throat.
