About

The rice used for this sake, Gohyakumangoku, was grown in paddies that used no agricultural chemicals or synthetic fertilizers, relying only on organic matter. Carp are released into these paddies, where they swim energetically between the rice plants, eating weeds and pests. This sake, Ubuyamamura, is brewed with water from the Ikeyama Water Source, which was selected by the Environment Agency as one of the 100 Famous Waters (Meisui Hyakusen) of Japan.
