About
Toshimaya is a sake brewery located in Honmachi, Okaya City, Nagano Prefecture, founded in 1867 (Keio 3). Its flagship brand, Miwatari, takes its name from the omiwatari, the ridges of ice that form across Lake Suwa. From competition-entry sake to futsushu (regular sake), the brewery uses only rice grown in Nagano Prefecture. It works with more than eight varieties, including Kinmon Nishiki, Miyama Nishiki and Hitogokochi, and chooses among them to suit the character of each product. The brewing water is subsoil water from Mount Hachibuse (鉢伏山), which rises behind the brewery. Under the theme "committed local sake where you can see smiling faces," Toshimaya also brews sake under brands such as Hoka and Onbashira.
