Alcohol usage limit quantity (Arukoru Shiyo Gendo Suryo)

アルコール使用限度数量あるこーるしようげんどすうりょう
The alcohol usage limit quantity (arukoru shiyo gendo suryo) is a standard that sets the maximum amount of raw-material alcohol that may be used when making sake (seishu) in Japan. Under this standard, the limit set for each brewery site allows up to 280 liters of raw-material alcohol (converted to 100% alcohol by volume) to be used for every 1,000 kg of polished rice used in production within the brewing year. This restriction is important for maintaining the quality of sake and also helps to promote lawful production methods. As a result, high-quality sake is provided to consumers.
