Carbon dioxide injection method (carbonation method for sparkling sake)
炭酸ガス注入方式たんさんがすちゅうにゅうほうしきThe carbon dioxide injection method is a way of making sparkling sake in which carbon dioxide gas is artificially added to a low-alcohol sake after it has been made. It differs from the in-bottle secondary fermentation method, the other production method for sparkling sake. As the carbon dioxide dissolves into the sake, the result is a drink with refreshing bubbles. This technique is commonly used for carbonated soft drinks. Adding carbonation gives the sake a light mouthfeel and lets drinkers enjoy a fresh taste.
