Gokosui (spring water of Gokonomiya Shrine, Fushimi)

御香水ごこうすい
Gokosui refers to the groundwater that wells up within the grounds of Gokonomiya Shrine in Fushimi Ward, Kyoto. Sake brewing has flourished in this area since the Edo period, and its abundant groundwater is used to brew sake. Gokosui in particular is high-quality soft water, which gives the sake made in the Fushimi district a sweet character. For this reason, sake brewed in Fushimi is affectionately known as "Fushimi no Onnazake" (Fushimi's "feminine sake") and is often contrasted with the sake of Nada. There are six wells from which Gokosui springs, and each is regarded as indispensable to local sake brewing. Gokosui is an important element influencing the flavor and aroma of the sake.
