Haoke (partially filled storage tank)
端桶はおけHaoke (端桶, also given as "hashioke") refers to sake in storage that remains in a tank that is not full because part of the sake has been drawn off. In this state, the tank has empty space inside, which may raise the risk of quality deterioration and of hiochi (deterioration due to oxidation). It is generally recommended to keep sake tanks full to reduce the surface area exposed to air and so preserve quality, so sake in a haoke state requires appropriate management.
