Ingredient list (genzairyomei no hyoji)

原材料名の表示げんざいりょうめいのひょうじ
The ingredient list (原材料名の表示, genzairyomei no hyoji) is the section of a sake label that names the ingredients used to make the sake. Under the labeling standards for production methods and quality that are set by law, every ingredient except water must be listed. Rice is listed first, followed by rice koji, and then any other ingredients in descending order of the amount used. For example, if sugars such as glucose or starch syrup (mizuame) are used, this must be stated, and acidulants such as lactic acid and succinic acid may also be listed. Monosodium glutamate may be indicated either as "glutamic acid Na" or as "seasoning (amino acid salt)." In this way, the ingredient list is an important element in ensuring transparency for consumers.
