Namachozoshu (sake stored unpasteurized, pasteurized once before shipping)
生貯蔵酒なまちょぞうしゅNamachozoshu (生貯蔵酒) is a type of sake that is stored at low temperature in an unpasteurized state after the moromi (fermentation mash) has been pressed. It is pasteurized (heat-sterilized) only once, just before shipping, so drinkers can enjoy a fresh, raw character. Namachozoshu is made to bring out the qualities of the sake, and it has a lighter, more refreshing drinking profile than ordinary sake. Because it is carefully kept at low temperature, its flavor and aroma are preserved, and the vivid freshness typical of young sake stands out, which is a large part of its appeal.
