Notando (taste richness index)

濃淡度のうたんど
Notando (taste richness index) is a numerical indicator of how rich or light a sake tastes. It is calculated from the glucose concentration (S) and acidity (A), and it can account for roughly 70% of the difference in richness or lightness of taste. The formula is as follows: Z (notando) = 0.42S + 1.88A - 4.44 When the sake meter value (SMV) (N) is used instead of glucose concentration, the following formula is used: Z = (9454 / 1443 + N) + 1.88A - 68.5 The notando value classifies the richness of a sake's taste as follows: - Very light: Z = -3 - Fairly light: Z = -2 - Slightly light: Z = -1 - Neither: Z = 0 - Slightly rich: Z = 1 - Fairly rich: Z = 2 - Very rich: Z = 3 In this way, notando quantifies the sensory character of sake and serves as an important reference for consumers choosing a sake to suit their taste.
