Plain filtration
素濾過すろかSuroka (plain filtration) refers to filtration performed during the sake-making process without the use of additives such as activated carbon. The method mainly removes impurities, yeast, and suspended particles by physical means, with the aim of preserving the pure character of the sake. Because suroka allows the flavor and aroma of the sake to remain in a more natural form, it is a technique favored for sake in which the taste and characteristics of the rice are valued, particularly Junmai and namazake (unpasteurized sake). The process can also affect the color and appearance of the sake.
