Reiyoshu (sake served chilled)
冷用酒れいようしゅReiyoshu refers to types of sake that are recommended to be served chilled. Ginjo, namazake (unpasteurized sake), and namachozo (sake stored unpasteurized and pasteurized once at bottling) in particular are often served cold to bring out their flavor to the fullest. Chilling highlights a refreshing mouthfeel and a fruity, delicate aroma, allowing drinkers to enjoy the sake even more. Reiyoshu is also popular with many drinkers when pairing with food, as its light, clean taste complements the dishes.
