Shinshuka (Shinshubana): aroma of new sake

新酒香(新酒ばな)しんしゅか(しんしゅばな)
Shinshuka (also called Shinshubana) refers to the aroma characteristic of shinshu, or new sake, which is sake from the newest brewing year. This aroma arises mainly during the fermentation of rice and koji, and is typically fruity and showy. Warming the sake (kan) often brings out the aroma further, making it seem stronger. Shinshuka gives drinkers a sense of freshness and adds to the enjoyment of the sake's flavor.
