Shironuka Yodan
白糠四段しろぬかよだんShironuka Yodan is one of the special mash-preparation methods used in brewing ginjo sake. In this technique, white sugar derived from polished rice is steamed and simmered, then added to the moromi (fermentation mash). The process is carried out in four stages, and controlling the temperature and timing at each stage is important. The sugars obtained through Shironuka Yodan help the yeast ferment and can give the sake a richer aroma and a deeper flavor. The technique is valued as a traditional method for making especially high-quality sake.
