Tsumeguchi (bottling stage)

詰口つめぐち
Tsumeguchi refers to the stage in sake production just before finished sake is filled into containers such as bottles or barrels. At this stage, water may be added as needed to adjust the character of the sake. Filtering to remove cloudiness may also be carried out at the time of tsumeguchi, which helps produce a clear, easy-to-drink sake. Tsumeguchi is an important part of the final finishing of sake, and it represents the last quality control step before the sake reaches consumers.
