The text describes a fruity, sweet aroma and mellow flavor from aging, with a moderate lingering body, which points to a modestly aromatic, slightly full profile. Light acidity and delicate sweetness suggest a medium sweetness level, with the 55% polish and 16% alcohol supporting this balance.

About

As autumn sets in and the temperature inside the brewery approaches the outside air, the winter new sake was stored and left to mature slowly until its quality ripened to its peak drinking window. Hiyaoroshi (sake pasteurized once before storage and not pasteurized again before shipment) gains a mellow character during aging, and its appeal lies in that mellowness together with the juicy freshness characteristic of namazume (bottled without pasteurization). Made with Yamada Nishiki grown in Noto, polished luxuriously to 55% (rice polishing ratio). A sweet, fruit-like aroma, a crisp acidity and delicate sweetness blend softly, followed by a moderately full finish that lingers. Enjoy it with grilled meat or seasonal mushrooms, with a sprinkle of salt and a squeeze of citrus such as sudachi or kabosu.
