About

All of the rice is Iwai (祝), a sake rice grown only in Kyoto Prefecture. The distinctive fullness of Iwai gives this sake a rich flavor, and it has been finished with a mellow mouthfeel that keeps the umami of the rice. This sake can be enjoyed at a range of temperatures. About Iwai (祝), a sake rice: Iwai is a sake rice variety that is easy to polish and low in protein, with high suitability for brewing. It is grown only in Kyoto Prefecture. Before the war, it was cultivated in many fields across the prefecture. However, its yield was low and it was difficult to grow, so it was no longer planted after the war. It was revived for a time, but by around 1974 (Showa 49) it had again disappeared. After trial cultivation, sake made with Iwai was revived in 1992 (Heisei 4).
