About

A rare Junmai Daiginjo brewed with the kimoto method (kimoto-zukuri, a traditional yeast-starter method) and no added yeast, one of very few sake of its kind in Japan. Natural rice is generously polished and fermented slowly over a long period during the cold winter season, resulting in a rich flavor and an abundant aroma. Muroka Shizenshu (unfiltered natural sake).
