About

"Shizen no Manma" (roughly, "just as nature made it") is the original natural sake (shizenshu) of Teradahonke. This Nama Genshu is the unpasteurized undiluted version of Gonimmusume Junmai, the brewery's most popular sake. It is brewed in winter using the kimoto method (traditional yeast-starter method). No water is added, there is no pasteurization (hiire), and no other intervention is made. The sake is bottled just as it was pressed. It offers a fresh, pleasant acidity and richness, along with the dense flavor characteristic of kimoto. It can be enjoyed as it is, on the rocks, or diluted with water to taste. Unlike "Shiboru Tamanma" (roughly, "just pressed"), this sake is not cloudy (nigori). Please store it in the refrigerator. Muroka shizenshu (unfiltered natural sake)
