About

Released after about one and a half years of aging in the bottle, this Kimoto Junmai Cho-karakuchi is brewed with kimoto (traditional yeast-starter method). The kimoto method gives the acidity both softness and strength, and the aging draws out a mellow umami that harmonizes with it. It is not simply dry; it is also rich in umami. Within its dryness lies a gentle richness and a moderate acidity in good balance, combining strength with a clean finish. It is a Cho-karakuchi junmai sake. It can be enjoyed across a wide range of temperatures, from warmed (kan) to chilled, at room temperature, or lukewarm (nurukan).
