About

Made with the sake rice varieties Yamada Nishiki and Omachi, polished to 45%, and brewed with underground water (fukuryusui) from the Yabe River, which rises in the deep mountains of Oku-Yame (奥八女) in Yabe Village. Fermentation was allowed to proceed slowly at low temperature. A junmai daiginjo with a bright, fruity aroma and a soft taste with a clean finish.
