The description notes a gentle nutty and caramel aroma with a slightly sweet, soft, plump umami, which fits a restrained aroma and a rounded, fuller body. The 65% polish and 15% alcohol junmai places it in the jun (rich, restrained) quadrant.

About

During koshiki-okoshi (the start of rice steaming), the brewery visits the Kinkengu shrine in the local town of Tsurugi to pray for safe brewing throughout the year. The name "Kinken" was taken from the Kinkengu shrine. This is the opposite of the robust, acidic and rich otoko-zake (male-style sake) of yamahai (traditional yeast-starter method) junmai. Drinking the onna-zake and otoko-zake side by side is interesting, as the differences are very clear. A mild aroma reminiscent of nuts and caramel can be detected. Its main characteristics are a slightly sweet, soft mouthfeel and a plump, gentle umami.
