About

This product is a freshly pressed Yamahai Junmai, bottled without filtration or heat pasteurization so that its fresh flavor is preserved as it is. It has the rawness and freshness typical of new sake, along with the sturdy body and forceful acidity unique to genshu (undiluted sake). Available only in winter, it is a product with outstanding drinkability. Made entirely (100%) with subterranean water from Mount Hakusan and Yamada Nishiki grown in the Special A district (Yoshikawa, Miki, Hyogo Prefecture), this is a rich, full-bodied Junmai sake brewed using yamahai shubo (a traditional yeast starter). It pairs exceptionally well with the winter cuisine of the Hokuriku region. The aroma is restrained, yet a sweet fragrance reminiscent of banana, melon and Western pear can be detected. On the palate, it is softly sweet, with a thick, juicy umami well balanced by crisp acidity, giving a powerful, full-bodied taste. Accompanied by bitterness and astringency, its rich, full flavor lingers into the finish. True to Kikuhime's style, it shows the powerful character consistent with the brand's usual profile.

A winter-limited sake, available only during the new sake season.
