About

New sake is pasteurized once and then matured through the summer in an earthen-walled storehouse (dozo). In autumn, when the flavors have settled and the richness deepens, the sake is bottled without a second heat treatment (namazume) so that drinkers can enjoy the nomikiri (the flavor at its fullest point of drinking-through) as it is. This bottling is released as "Nakajimaya Akiagari." Retaining its freshness while taking on a pleasant sense of maturity, "Akiagari" is a junmai ginjo. Aging brings together the rich umami and vivid acidity that are characteristic of Nakajimaya into a beautiful harmony. Chilled, it offers a smooth balance of sweetness and umami with a clean finish, but when warmed to nurukan (lukewarm), the umami comes forward and the flavor swells. Enjoy it chilled or warmed alongside autumn delicacies.
