The 50% polishing ratio, daiginjo classification, and the description's fruity, floral ginjo aroma point to high aroma. The SMV of +5, the 淡麗辛口 wording, and low acidity of 1.2 indicate a light, dry profile, with the 16% alcohol adding a modest structure.

About

Crafted with Nihonsakari's original yeast and the traditional techniques of the Tamba toji (master brewers), this is a serious Daiginjo. Sake rice polished to 50% (rice polishing ratio) is brewed slowly at low temperature, producing the fruity, floral ginjo aroma that defines the style. The result is a well-balanced Daiginjo with a clean, light, and dry character in the Tanrei style, yet with a solid backbone at an alcohol content of 16%. Freshly pressed namazake is stored cold without further processing and pasteurized only once (ikkai hiire). On the palate, a fresh ginjo aroma spreads across the mouth.
