About
Released in 2015 as a sake created in collaboration with contemporary art. Since then, it has been produced every year with the cooperation of a range of artists, up to the present. At highly polished rice ratios, koji production becomes extremely difficult, and it becomes harder to draw out the umami derived from koji. With KIZASHI, however, the brewery succeeded in drawing out about 1.5 times the rice umami of Zankyo Super7, which is also polished to a 7% rice polishing ratio, making this a technically accomplished bottle. Storing it refrigerated allows it to age beautifully. A rare bottle, limited to 1,000 bottles per year. (The label changes every year.) 2023 Art Work Suzuki Yasuhiro, Fastener Boat (2001/2008) --- Suzuki Yasuhiro was born in 1979 in Hamamatsu, Shizuoka Prefecture, and graduated from Tokyo Zokei University. His artwork continues to reexamine everyday objects and natural phenomena, discovering new relationships between things that are not normally connected.
