The description calls it slightly dry with umami and koku, and the 65% polishing ratio and junmai style point to restrained aroma and a full body. This places it in the jun quadrant with low sweetness.

About

Brewed with rice grown in the soil of Saiki, the brewery's home town, and with water from the clear Banshogawa River. Fune shibori is a traditional method in which moromi (fermentation mash) is packed into hemp bags and pressed slowly under weights. Slightly dry, this junmai sake has umami and richness. Its acidity is well balanced, and it brings out the enjoyment of a meal. Chilled is of course delicious, and we also recommend a gently warmed (kan) serving at about 45°C.
