Kun-shu — aromatic and light

The 40% polishing ratio and the described apple- and pear-like aroma point to a high-aroma profile. The light yet mellow texture, combined with low acidity (1.2) and SMV of 1 to 2, suggests a soft, slightly sweet, light-bodied sake.

About

Koji is also made by hand, and the shubo (yeast starter) is prepared by hand. The moromi (fermentation mash) is fermented at low temperature for more than one month, then pressed in a fune (traditional press). The newly pressed sake is aged for more than six months before shipment. Its aroma is rich and fruity, reminiscent of apples and pears, with complex notes of nuts woven throughout. The flavor is tanrei (light and clean) yet mellow, and the two are in harmony. It is a worthy example of what is called the art of sake.
