Kun-shu — aromatic and light
The 28% polishing ratio and the description of extreme lightness and clean, water-like character point to a gentle ginjo aroma and a light body. SMV +2 with low acidity of 1.2 suggests a soft, mildly sweet impression.

About
Senshin began as a commemorative sake released in April 1995 to mark the completion of Asahi Shuzo's new No. 1 brewery (now known as the Asahi-kura). The taste of that commemorative sake was well received, and it was commercialized and began sales in May 1997. Initially it was released only a few times a year as a limited shipment. Since last year, however, it has been shipped year-round, so it can be enjoyed throughout the year. The character of Senshin comes from polishing Takane Nishiki to 28%, which yields a taste that is exceptionally tanrei (light and clean), as clear as water. In addition, because it is pressed and then aged slowly, it offers a soft, smooth flavor and a refined richness.
