About

Made from snowmelt from Mount Komagatake (Kai Komagatake) in the Minami Alps, this is a true local sake. In 1750 (Kanen 3), the first head of the family, captivated by the quality of Hakushu's water, founded the brewery here. The brewery makes its sake with the clear water of Hakushu, which is included among the One Hundred Famous Waters of Japan, and with sake rice grown in its own fields and by local farmers through joint production. The brewery blends traditional brewing methods with modern techniques and maintains a painstaking approach throughout, from koji making to pressing. The Junmai Daiginjo, made with Yamada Nishiki polished to 37%, is characterized by a soft, gentle sweetness and a fresh, lively finish.
