About

Made using only Yamada Nishiki polished to 60%, this Tokubetsu Junmai was brewed with a yamahai (traditional yeast-starter method) shubo (yeast starter) and fermented slowly at low temperature for nearly two months, from the starter through to the moromi (fermentation mash). The process draws out a fruity aroma and a rich, mellow umami. The broad acidity and full flavor characteristic of yamahai brewing enhance the taste of food.
