About

The fresh character produced by the action of koji and other microorganisms is unlike anything you may have tasted before, leaving an impression of umami bursting across the palate. Since 2015, the brewery has worked with several dozen farming households in the Nagomi district of the Kikuchi River basin to grow sake rice. Today this covers about 12% of all farmland in Nagomi-machi. The brewery takes great pride in the fact that all of the Yamada Nishiki used in its sake today is grown in the Nagomi district of the Kikuchi River basin, a paddy rice culture with a history of 2,000 years.
