About
Born from the remarkable potential of a certain microbe, which traditional thinking considered unsuited to sake brewing, this sake offers a lively effervescence (Effervescent). It is a special bottle that renews one's sense of wonder and romance in sake making. Since 2015, the brewery has worked with dozens of farmers in the Wami district of the Kikuchi River basin to grow sake rice. Today this covers about 12% of the farmland in Wami Town. All of the Yamada Nishiki used in brewing this sake is grown in the Wami district of the Kikuchi River basin, a region with a 2,000-year history of wet-rice cultivation, which is a great source of pride.
