About

What is hiyaoroshi (sake stored through the summer and released in autumn)... The stored sake is shipped in early autumn, once the outside air temperature and the temperature inside the brewery have become roughly the same. Fine-textured umami, a gentle sweetness, and a refreshing acidity come together in a more mellow, rounded flavor. Enjoy it well chilled, or warmed to lukewarm (nurukan). [Changes from previous years' hiyaoroshi] Rice polishing ratio changed (65% → koji rice 60%, kake rice 70%). Part of the kake rice uses genkei seimai (original-form rice polishing). Tank pasteurization followed by namazume bottling has been changed to bottling after pressing, with a single pasteurization followed by low-temperature bottle storage. This allows shipment by ambient-temperature delivery.
