About

Zoka (造賀) is the name of the district where the Yamada Nishiki rice paddies of Kamoizumi Shuzo are located. About 6 km north of our brewery, on a plateau at an elevation of 350 m, the paddies enjoy excellent sunshine, water access, and a favorable range of temperature differences, allowing high-quality sake rice to be grown. In addition, farmers, the brewery, JA (Japan Agricultural Cooperatives), and local government have joined together to form the Higashi-Hiroshima Sake Rice Cultivation Promotion Council, working to improve the quality of sake rice. This junmai sake is brewed with Yamada Nishiki grown with care by dedicated farmers. It is characterized by the soft, fine-textured mouthfeel that is distinctive to Yamada Nishiki.
