About

"Zoka (造賀)" is the name of the district where Kamoizumi's Yamada Nishiki paddies are located. The fields spread across a highland at an elevation of 350 m, roughly 6 km north of our brewery. They enjoy excellent sunlight, water access, and temperature variation, and high-quality sake rice is grown there. In addition, farmers, the brewery, JA (the agricultural cooperative), and local government have joined together to form the Higashi Hiroshima Shuzo Sakamai Saibai Suishin Kyogikai (東広島酒米栽培推進協議会), working to improve sake rice cultivation. This junmai sake is made with Yamada Nishiki grown with care by enthusiastic farmers. Undiluted sake (genshu) pressed this spring was pasteurized in the bottle, bottled, and kept in refrigerated storage. Its gentle, clean flavor is just right for chilled sake in summer. Please serve it chilled.
