Hattan Nishiki

Hattan Nishiki is one of the leading sake rice varieties of Hiroshima Prefecture and is highly regarded in sake production. The grains are large, absorb water well, and are soft and easily dissolved. This allows saccharification during brewing to proceed smoothly, resulting in sake with few off-flavors and an elegant, clean taste. Because of these characteristics, Hattan Nishiki is widely used by sake breweries across the country and is especially valued in brewing aimed at high-quality sake.
