Ikko moto (one shubo per moromi)

1個もといっこもと
Ikko moto refers to brewing one moromi (fermentation mash) from one shubo (yeast starter). The shubo is a special liquid containing the microbes and yeast that support sake fermentation, while the moromi is the mixture that is actually fermented to make the sake. If one shubo is divided in half to make two moromi, this is called "niko moto" (2個もと), and the brewing volume can be increased further from there. This unit plays an important role in the traditional sake-making process.
