Nomi / Nomikuchi (tank outlet and spigot)

呑・呑口のみ・のみくち
Nomi and nomikuchi refer to the outlet set into the lower part of a sake storage tank. The upper outlet is generally called uwanomi, and the lower outlet is called shitanomi. Sake is normally drawn from the uwanomi, a process known as oribiki (滓引き), which is an important task for removing sediment (ori) and similar matter from the sake. Drawing from the shitanomi brings out sake mixed with sediment, known as orizake (滓酒) or origarami, so the outlets must be used selectively. The nomikuchi is also the stopper that seals the nomi hole (nomiana), and in this way it helps preserve the quality of the sake.
