ori-zake (sake with settled lees)

おり酒おりざけ
Ori-zake is sake that contains the sediment (ori) that settles at the bottom of the tank after the moromi (fermentation mash) is pressed through fine-mesh cloth. The ori is typically the white, cloudy portion left behind when the moromi is pressed. Sake bottled with a moderate amount of this sediment mixed in has a distinctive flavor and mouthfeel, offering a taste different from that of ordinary clear sake. Depending on the specific production methods and aging, ori-zake can show a richer aroma and fuller body, giving drinkers a new experience.
